Rigid knife, for de-boning and cleaning raw meat. The pointed blade lets you cut close to the bone. Ideal for deboning, skinning and cutting out tendons and fat. The blade is extremely hard (54-56 HRC) and has excellent cutting power. Easy to sharpen, yet the blade does not chip.

The ergonomic handle is soft enough to be comfortable and reduces user fatigue, but coarse enough so that the knife doesn't slip. It's also non-toxic, complying with European standards.
