Semi-rigid knife, for carving cooked meat. The blade is extremely hard (54-56 HRC) and has excellent cutting power. Easy to sharpen, yet the blade does not chip.

The ergonomic handle is soft enough to be comfortable and reduces user fatigue, but coarse enough so that the knife doesn't slip. The green handle makes the tool visible on the work surface, alerting staff of its presence. It's also non-toxic, complying with European standards.
